Catfish farming is one of the earliest aquaculture projects in North America, dating back to the 1960's, and surely the one with the greatest success. In the wild, they can be found in virtually every State and Province in all sorts of waters from rivers, bayous, streams, man-made lakes etc. In fact they are the most widespread and abundant fish in North America and as such have played a significant role in our culture for some time from recreational fishing to iconic status and symbols of national pride.

Catfish is a great eating fish and because it had been farm raised for so long, the quality and consistency are sure-fire. You can count on mild flavor and very firm texture with very dense meat.
