Emperors
are found in sandy grassy areas around coral reefs in tropical waters worldwide, from
Australia to South America and the Caribbean. They are closely related to the Perch
family. They feed mainly on fishes but also on mollusks, crustaceans, and sea urchins.
Emperors are lean and have a mild, sweet flavor similar to that of snapper. They have a
small flake and medium texture. They are sold fresh, skin-on fillets, bone out,
approximately 200-300 grams each. |
