Whole size:
6-20kg Identifying features: Sides dark brown, grey or
almost black, sometimes with rough skin. Long lateral line with strong curve at end of
pectoral fin (may have additional curves further along body). Pelvic fins well developed.
Distinct spiny ridge sometimes present along belly. Body solid, moderately long. Head
large with long fang-like teeth in upper jaw.
Comparisons: Other similar species have more silvery bodies and
either lack or have very small pelvic fins.
Fillets: Moderately deep, rather elongate, upper profile almost
straight, taper pronounced, milky white. Rich highly prized fish, flavor intensive, oil
rich. Cooks up bright white.
Habitat: Pelagic in the
open ocean, probably concentrating around seamounts.
