Macgregors department of more than thirty skilled butchers makes up our Portioning and Vac
Pack Team. There is much work involved in
preparing cuts of meat for Our Customers Centre-of-the-Plate requirements. Whether feeding our automated steak-cutting
equipment, custom cutting steaks to Our Customers specifications, or trimming whole muscle

Portioning
With eight generations "under the knife", the expertise and
care taken in portioning beef, veal, lamb, poultry, and more recently fresh seafood are
skills that can't be learned over night. The meat business has evolved pretty quickly over
the years but a sharp knife and a skilled butcher/portion cutter may never be fully
replaced. That's why we have assembled the finest in the trade since the days of our very own sturdy Scot, Peter! |

cutting steaks into our fresh seafood offering. Our group of enthusiastic "fish
cutting mongers" will bias cut, cut by IPM (Intelligent Portioning Machine), and look
after preparing fresh fish in ways you never thought possible - all fresh and from all

Poultry
The Garyray Dr. foodservice facility houses a separate Poultry fabrication room and
cooler. With an automated "cone" deboning line, our ability to custom process
poultry with short lead-time is one that compliments our customer's additional
Centre-of-the-Plate protein needs. |
