Black Tiger shrimp has fast become the shrimp of choice for the Canadian food-service marketplace. The vast majority of shrimp sold in Canada at retail, however, is the Asian White Shrimp. It is the shrimp of choice at retail primarily due to its fast growing capabilities, and more importantly its pricing structure. Fortunately, for food-service, the white shrimp only grows to a headless 21-25 size. The average size is in fact, a much smaller 40 count, and this is the size of choice for farms, as the 40 count size maximizes yields for the farmer. This smaller size shrimp does not lend itself well to the food-service sector that demands a larger shrimp. Enter the Black Tiger.

Why is Vietnam an important country of origin for Black Tiger? Today, Thailand produces 95% Vannamei Whites. The 5% left is primarily sold in the domestic Thailand market. Thailand really began re-seeding its ponds about 5 years ago to the white specie. Thailand's decision has left a void in the quality Black Tiger production. While India and Bangladesh do produce a lot of tigers, the quality standard is not too what Thailand was doing. Enter Vietnam.

Today, Vietnam is recognized as the best country of origin for Black Tiger production. Urner Barry, the Price authority on seafood has established Vietnam as a .25/lb premium over India, and .50/lb over Bangladesh for raw headless.

Camau region also plays an important part here. Located in the south of Vietnam, in close proximity to the major farms, Camau region, also has the advantage of producing 80% "Extensive" shrimp. The term extensive shrimp farming refers to utilizing the natural environment for shrimp farming. Plankton, the natural protein is in fact the food for 100% of Black Tiger shrimp sizes 4-6 through 13-15 headless!
