The very first run of Spring Herring from Gran Manan Island Maine is usually early February. The petit herring is delicately flavored compared to the fuller “oilier” taste of larger fish. The humble sardine is finally starting to get the culinary respect it deserves. It is well suited to most applications, particularly marinating & grilling. The healthy oil content picks up the smoky grill flavor extraordinarily.
