Fleur de Sel (flower of salt) is the premier condiment salt. This artisan sea salt is comprised of "young" crystals that form naturally on the surface of salt evaporation ponds. They are hand harvested under specific weather conditions by traditional "Paludiers" (salt farmers). True Fleur de Sel comes from the Guérande region of France. Like fine wine regions, different areas within Guérande produce salts with their own unique flavors and aroma profiles. Uses: Ideal for salads, cooked fresh vegetables and grilled meats.

New Zealand - Pacific Natural Coarse Sea Salt is harvested from the deep clear waters of the great southern oceans that sweep through Cook Strait between New Zealand's North and South Islands and into the solar salt field. These waters are evaporated using the natural process of sun and wind. At the end of each summer Pacific Natural Sea Salt is gathered so as to maintain the balance of minerals present in salt harvested from the sea.

Fumee de Sel by Le Tresor is unlike any smoked sea salt available. Fleur de Sel is cold smoked with Chardonnay oak chips to preserve the mineral content and natural flavor of the salt. Le Tresor - Fleur De Sel is smoked from seasoned French oak wine barrels, which for years have been used in the aging of fine wines. The five to seven year old barrels are hand selected for wood smoking chips. Starting with salt crystals that are hand raked in France and ending with the all natural smoking that has to be done in very small batches. This unique smoked salt is hand made from start to finish. The crystals are smoked to a light toasty brown and have a deep smoke flavor without being bitter. The moist Fleur de Sel crystals readily absorb the natural smoked flavors of the oak and chardonnay.

Grey Salt is a "moist" unrefined sea salt usually found on the coastal areas of France. Its light grey, almost light purple color comes from the clay found in the salt flats. The salt is collected by hand using traditional Celtic methods. Grey Salt has gained great fame in the mainstream culinary world in the last few years and is considered by many to be the best quality salt available. It is available in coarse, stone ground fine and extra fine grain.

The source of its water is the snowy Australian Alps. Salt is a natural feature in many Australian landscapes. The Murray-Darling Basin's low rainfall and high evaporation have combined to concentrate salt in the groundwater. This salt is produced naturally from the underground brines in the Murray Darling Basin. A red pigment, carotene, is secreted from the salt tolerant algae. The underground saline waters have been laying dormant for thousands of years. By utilizing these waters the environment is improved and a beautiful salt is produced.
