These
scallops are from the in-shore scallop fishery within State Waters (which are waters from
each states shoreline out to 3 miles). A
limited access scallop license is still required, but these fishermen are not limited by
their days at sea, but instead they are limited by their catch size. No more than 400 lbs
of scallop meats per day. As these scallopers
are allowed to fish close to shore, and will return to port in a single day, as their
catch weight is extremely small, these are truly day boats.
The scallop meats will then enter the distribution chain within 24 hrs, requiring
NO preserving agents to lengthen their shelf life.
These
untainted scallops are identifiable by their natural mix of colors from ivory to a coral
color, a wiggling firmness showing that they are still alive, and a natural
briny-ness, allowing the scallops to always caramelize beautifully with all their natural

we will be handling true Diver Caught Sea Scallops. |
