Snow Bass belong to the family of Cusk-eels, however they
are not to be confused with true eels. Snow
bass more resembles a cod in appearance through the head, but the rest of its body looks
like it was crossed with an eel similar to Kingklip or Ling. Never more than a minor commercial fishery, Snow
Bass is very new to this marketplace, and has come via by-catch of the Tuna fishery from
Baha California to Peru in the Pacific. They are found as deep as 600m. Snow Bass boasts
moist flavorful meat that cooks up an opaque white. It is mild and sweet, similar to
Chilean Seabass in flake but with a much softer texture.
It is best suited for pan-roasting, baking or broiling. It is typically
never sold skin-on and would likely be trouble on the grill. |
