This Striped Bass is a hybrid specie that is farm raised. This came as a
result of wild striped bass stocks nearly disappearing in the 1960's due to over-fishing.
So this Striped Bass is a combination of the true wild striper for appearance and taste,
and the White Bass for stronger, faster growing characteristics - an aquaculture recipe
for success. Striped Bass is the largest of all the Sea Basses reaching 5lbs - don't get
confused, the largemouth and smallmouth Basses are actually part of the Sunfish family so
they don't count. Because they are farm raised, sizing is strictly controlled and they are
sold between 1-2.5lbs. They are only farm-raised in the United States, in Texas,
California, and Carolina to name a few. Striped Bass has a lot going for it to say the
least. In terms of quality, they are second to none. Fish can be harvested and sent to
market next day - gleaming fresh and of uncompromising consistency in flavor and texture
because of the stringent quality control at the farms. Striped Bass is premium eating as
well. The great looking dark striped skin crisps up beautifully when cooked and tastes
great. The flesh cooks up white and moist and has a firm flaky texture. It is lean. It is
mildly flavored and goes well with all kinds of sauces. It can be cooked whole. The name
Striped Bass couldn't be more appealing. Fillets are a perfect portion size, 6-8oz. It
works well on the grill, in the oven, in a pan, in the steamer. |
