Swordfish
is found worldwide, including the Atlantic, Pacific and Indian Oceans. They are most
commonly found in temperate waters but also frequent tropical and even cold waters around
the world at depths of 200-600 meters. They are Big game fish for sure. Swordfish can
reach weights of 1,400lbs but commercial catches are not that big. Female Swordfish are
much larger than the males, which rarely exceed a couple hundred pounds. Swordfish are big
time predators feeding on all sorts of fishes, squids and cephalopods. The only things
eating swordfish are mammals such as Killer Whales, Sperm Whales and Humans. Humans like
swordfish because they are great grill fish. They have a very firm meaty texture that
stays moist when cooked, great yet mild flavor appealing to non-fish eaters and people
wishing to experiment with unique flavorings alike. Swordfish steaks do vary in color when
they are raw from an off white to a pinkish and even orange. Quality isn't a function of
color. One way to tell the freshness of steaks is the bloodline running along one side.
Bright and red indicates freshness. A bloodline that is brownish or slightly greenish
indicates that it is old. |
